The truth is that most "chain" sauces are not really very good.
It's understandable when you consider that a national restaurant has to please tastes in cities and towns from Maine to California and Washington to Florida. And that's impossible.
A hot sauce that would please a Texan would be way too hot for most people in Ohio, for example. A good mustard in New Jersey would never please someone in Denver. And consider that there are 1,000's of varieties of hot sauce, BBQ, mustard, gravy, steak sauce, etc.
No, most chain restaurants do not have very good sauces.
Which is why it is such a pleasant surprise to discover T.G.I. Friday's copycat recipes Jack Daniels Barbeque Glaze.
This stuff is good. Really good.
It's smokey and tangy and sweet. It's everything you want from a barbeque glaze.
Is it the best ever? Of course not. But it may be the best chain sauce I've ever tasted.
T.G.I. Friday's Jack Daniels Barbeque Glaze
Ingredients:
1 head of Garlic
1 tablespoon Olive Oil
3/4 cup Water
1 cup Pineapple Juice
1/4 cup Teriyaki Sauce
1 tablespoon Soy Sauce
1 1/4 cups Dark Brown Sugar
3 tablespoons Lemon Juice
3 tablespoons minced White Onion
1 tablespoon Jack Daniels Whiskey
1 tablespoon crushed Pineapple
1/4 teaspoon cayenne pepper
Directions:
Roast Garlic:
Cut about 1/2 inch off of the top of the Garlic and then cut the roots off so it will set flat.
Remove most of the papery skin from the Garlic but leave enough so it will stay together.
Put garlic into a small baking pan and drizzle with the Olive Oil.
Cover with lid or foil
Bake at 325 for 1 hour.
Remove and cool.
Mix and Simmer:
Combine Water, Pineapple Juice, Teriyaki Sauce, Soy Sauce and Brown Sugar in a medium saucepan.
Simmer over medium/high heat, stirring occasionally until mixture boils.
Reduce heat until mixture is just simmering.
Add Roasted Garlic
Squeeze the sides of the head of garlic until the garlic is squeezed out (it should be the consistency of butter)
Measure 2 teaspoons.
Whisk into saucepan.
Bring it all together
Add all the remaining ingredients and stir.
Let the mixture simmer for 40-50 minutes or until sauce is reduced by about 1/2. It should be thick and syrupy.
As with any sugar-based sauce, if you are grilling with it, only apply the sauce in the last 5 to 10 minutes of cooking so as not to burn the sugars.
Serve extra on the side for dipping. You may want to double the recipe.
PS. Save any remaining Roasted Garlic to make wonderful Garlic Bread for this meal or up to a week in the refrigerator for an Italian meal.

Katie Couric’s talk show to air at 2 p.m. weekdays on WESH
Katie Couric’s daytime talk show will air at 2 p.m. weekdays, WESH-Channel 2 announced Monday.
WESH General Manager Jim Carter announced the scheduling as Couric came to town to promote her new show. We’ll have a separate story on her visit.
“Katie” debuts Sept. 10 and will air at 3 and 4 p.m. in many other markets. But WESH has Ellen DeGeneres at 3 and local news at 4. So Couric will air live in the 2 p.m. slot.
The daytime show will reunite Couric with executive producer Jeff Zucker, who guided her through many successful years on NBC’s “Today.”
ABC is opening the 3 p.m. weekday time slot to accommodate Couric’s syndicated talk show in the fall. ABC affiliate WFTV-Channel 9 will offer a Steve Harvey syndicated talk show in the time slot.

‘Dancing With the Stars’: Kelly Clarkson, Gladys Knight to sing on finale

ABC is bringing on Kelly Clarkson to perform on the Tuesday season finale of “Dancing With the Stars.”
She will sing a medley of “Dark Side” and “Stronger,” and she will get to plug “Duets,” her reality singing contest that debuts Thursday on ABC, of course.
Gladys Knight, a “Dancing” competitor earlier this season, returns to sing on the two-hour finale, which starts at 9 p.m. Tuesday on WFTV-Channel 9.
The main business will be the dancing. The three celebrity finalists — Donald Driver, Katherine Jenkins and William Levy — and their partners will perform two dances apiece at 8 p.m. Monday. The judges will choose a dance that the couples can show improvement on from earlier in the season. The other dance will be the unpredictable freestyle.
On the finale, the three couples will perform a dance they have been given to learn in 24 hours. They will choose a dance to combine with music given to them after Monday’s show.
